…is one of my favourite lightings. Had a “green” day today with only vegetables, some (pan-fried) green asparagus for lunch and an improvised Italian feast for dinner. On the menu: Courgettes in two different crusts, carrots in a hot balsamico & olive oil vinaigrette and a caponata style eggplant casserole, oven-roast, accompanied by home-made focaccia. That sounds pompous, I know, but in fact all this can be done within an hour or so (when you’ve got the dough for the bread ready before). For the rest: a real, somewhat modest feast!
