For a quick lunch serving four people you need: the fillets of 6 to 8 mackerels (= 12 to 16 fillets), mustard, pepper, flour, oil – and that’s it. You pepper the fish, whip two tablespoons of mustard with a drop of olive oil (you could add some oregano), you coat the fillets with this mixture (use a brush), then with some flour and you fry them in oil in a hot pan, 2 minutes on each side or even less.
Serve your mackerels with a green salad, baguette and a glass of Chardonnay (or Sancerre or Riesling). Enjoy the bravos around the table.
