…on a morning like today. Sky is blue, air is fresh, so it may be winter outside but in my heart is spring (you know that line from Barry White, I suppose). Tonight, we’ll have a full blown Daube which is a slowly cooked beef casserole, and I’ll serve it with mashed potatoes made half of potatoes and half of pure, rich, golden butter. That is very unhealthy indeed but what can you do. It’s winter outside, that’s not the salad season, and you have to really feed your loved ones against the cold. Daube is a perfect way to do it: My butcher had beef cheeks for sale which make the perfect ingredient for braising. It’ll take five hours or so to really cook them through but then…Good to make plans for dinner already in the morning. It carries you through yet another working day.
